The wintermonts in Catalunia the people eat Calcots. It is a spring -onion in xxl size.
Nice on the bbq with vinetrimmings. Sizzeling on the fire, and kept warm in the Spanich roof tile.
You get black vingers, but no problem, the are very nice with Romesco sauce and Spanich lam with Terra Vermella!
